We’ve been enjoying so much fabulous food here in Mexico . . .

. . . that I almost feel guilty for not having shared MORE of it with you all, Fun Food Fans!

Of course, if you’ve been hanging out with me over on the PLAYground, then you’ve already been enjoying all kinds of deliciousness with me recently! 😉

From the Mac & Cheese variations galore we’ve been PLAYING with since before Juneteenth to the controversial hot & juicy Watermelon Salad to the Hot Fudge Sundaes & Banana Splits we’ve been enjoying during Ice Cream Month, our summer has been full of all kinds of fabulous #FoodFREEDOM!!!

But that doesn’t mean that we haven’t had time to explore a bit of the culinary creativity of our wonderful host country just south-of-the-border. Whether it’s the rich red Posole (above) or the multitude of tacos and enchiladas galore (below), Mexico has such a depth of distinctive dishes, that we’ve only just begin to scratch the surface.

Which is why I’d like to invite you into Our Mexican Kitchen Classroom before we wind down our superb summer in this spectacular state of Guanajuato.

We’ll kick off Latin American History Month with an introduction to some of the fun new kitchen tools we’ve been PLAYING with here, as well as show you some of the popular produce with which we are reacquainting ourselves since our return to North America!

Then, we’ll dive deeply into some of the Marvelous Mexican Meals that have captured our taste buds of late. The neat thing about this cuisine is that it so easily lends itself to vegetarian, vegan, and even gluten-free variations, too!
